Description

A deeply comforting Greek one-pot dish with fork-tender beef simmered in tomato sauce and silky orzo.


Ingredients

  • Beef (chuck, large chunks)
  • Orzo pasta
  • Crushed tomatoes
  • Beef broth
  • Olive oil
  • Onion
  • Garlic
  • Carrot
  • Tomato paste
  • Red wine
  • Bay leaves
  • Cinnamon
  • Allspice
  • Nutmeg
  • Salt & black pepper

Instructions

  1. Heat olive oil in a heavy pot and brown beef on all sides; remove and set aside.
  2. Sauté onion, carrot, and garlic until softened.
  3. Stir in tomato paste and cook until deepened in color.
  4. Deglaze with red wine, then add tomatoes, broth, spices, bay leaves, and beef.
  5. Cover and simmer gently for about 2½–3 hours until beef is very tender.
  6. Stir in orzo and continue cooking until pasta is tender and sauce thickens.
  7. Rest briefly before serving so the orzo absorbs the rich sauce.

  • For best results, use chuck beef for tenderness.
