Description
A deeply comforting Greek one-pot dish with fork-tender beef simmered in tomato sauce and silky orzo.
Ingredients
- Beef (chuck, large chunks)
- Orzo pasta
- Crushed tomatoes
- Beef broth
- Olive oil
- Onion
- Garlic
- Carrot
- Tomato paste
- Red wine
- Bay leaves
- Cinnamon
- Allspice
- Nutmeg
- Salt & black pepper
Instructions
- Heat olive oil in a heavy pot and brown beef on all sides; remove and set aside.
- Sauté onion, carrot, and garlic until softened.
- Stir in tomato paste and cook until deepened in color.
- Deglaze with red wine, then add tomatoes, broth, spices, bay leaves, and beef.
- Cover and simmer gently for about 2½–3 hours until beef is very tender.
- Stir in orzo and continue cooking until pasta is tender and sauce thickens.
- Rest briefly before serving so the orzo absorbs the rich sauce.
Notes
- For best results, use chuck beef for tenderness.
- Adjust seasoning to taste before serving.
- Let the dish rest for a few minutes to enhance flavors.
