Description

Caramelized cabbage wedges nestled into a silky, tangy feta cream with a hint of chili heat.


Ingredients

Scale
  • 1 large green cabbage (cut into thick wedges)
  • 1 cup feta cheese
  • ¾ cup Greek yogurt
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • ½ tsp chili flakes
  • ½ tsp smoked paprika
  • Salt & black pepper
  • Fresh parsley (chopped)
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment.
  2. Brush cabbage wedges generously with olive oil, season with salt, pepper, smoked paprika, and chili flakes.
  3. Roast 30–35 minutes until deeply golden and caramelized at the edges.
  4. Blend feta, Greek yogurt, garlic, lemon juice, and a drizzle of olive oil until smooth and creamy.
  5. Spread whipped feta cream onto a serving plate.
  6. Place hot roasted cabbage on top and spoon extra cream over it.
  7. Finish with chopped parsley and a light sprinkle of chili flakes.

Notes

  • For a spicier kick, increase the amount of chili flakes.
  • Ensure the cabbage wedges are cut evenly for uniform cooking.
  • Leftover whipped feta cream can be used as a dip or spread.
