- 1 large green cabbage (cut into thick wedges)
- 1 cup feta cheese
- ¾ cup Greek yogurt
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- ½ tsp chili flakes
- ½ tsp smoked paprika
- Salt & black pepper
- Fresh parsley (chopped)
- 1 tbsp lemon juice
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment.
- Brush cabbage wedges generously with olive oil, season with salt, pepper, smoked paprika, and chili flakes.
- Roast 30–35 minutes until deeply golden and caramelized at the edges.
- Blend feta, Greek yogurt, garlic, lemon juice, and a drizzle of olive oil until smooth and creamy.
- Spread whipped feta cream onto a serving plate.
- Place hot roasted cabbage on top and spoon extra cream over it.
- Finish with chopped parsley and a light sprinkle of chili flakes.
Notes
- For a spicier kick, increase the amount of chili flakes.
- Ensure the cabbage wedges are cut evenly for uniform cooking.
- Leftover whipped feta cream can be used as a dip or spread.
