Description

Ultra-crispy golden potato bites bursting with gooey melted cheese in every bite.


Ingredients

  • Mashed potatoes (cold & firm)
  • Mozzarella cheese cubes
  • Parmesan cheese
  • Panko breadcrumbs
  • Egg
  • Garlic powder
  • Paprika
  • Salt & black pepper
  • Fresh parsley (chopped)
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Season cold mashed potatoes with garlic powder, paprika, salt, pepper, and grated Parmesan. Mix well.
  3. Scoop about 2 tablespoons of potato mixture, flatten slightly, place a mozzarella cube in the center, and seal tightly into a ball.
  4. Dip each ball in beaten egg, then roll in panko breadcrumbs for a crispy coating.
  5. Arrange on the baking sheet, lightly spray with olive oil, and bake 20–25 minutes until deeply golden and crisp.
  6. Garnish with chopped parsley and extra Parmesan. Serve hot for maximum cheese pull.
