Ingredients
- Mashed potatoes (cold & firm)
- Mozzarella cheese cubes
- Parmesan cheese
- Panko breadcrumbs
- Egg
- Garlic powder
- Paprika
- Salt & black pepper
- Fresh parsley (chopped)
- Olive oil spray
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Season cold mashed potatoes with garlic powder, paprika, salt, pepper, and grated Parmesan. Mix well.
- Scoop about 2 tablespoons of potato mixture, flatten slightly, place a mozzarella cube in the center, and seal tightly into a ball.
- Dip each ball in beaten egg, then roll in panko breadcrumbs for a crispy coating.
- Arrange on the baking sheet, lightly spray with olive oil, and bake 20–25 minutes until deeply golden and crisp.
- Garnish with chopped parsley and extra Parmesan. Serve hot for maximum cheese pull.
