Description

A cozy, warmly spiced chicken soup with tender rice, vegetables, and rich golden broth.


Ingredients

  • Boneless skinless chicken breasts
  • Chicken broth
  • Curry powder
  • Cooked rice
  • Carrots (diced)
  • Potatoes (diced)
  • Onion (chopped)
  • Garlic (minced)
  • Apple (finely diced)
  • Coconut milk
  • Butter or oil
  • Salt & black pepper
  • Fresh parsley or cilantro

Instructions

  1. In a large pot, heat butter or oil over medium. Sauté onion, garlic, carrots, and potatoes for 5–6 minutes until slightly softened.
  2. Stir in curry powder and cook 1 minute to bloom the spices.
  3. Add diced apple, chicken breasts, and chicken broth. Bring to a gentle boil, then reduce to simmer for 20 minutes.
  4. Remove chicken, shred with forks, and return to the pot.
  5. Stir in cooked rice and a splash of coconut milk for creaminess. Simmer 5–10 minutes until thick and golden.
  6. Season with salt and pepper. Garnish with fresh parsley or cilantro before serving.

Notes

  • For a vegetarian version, substitute chicken with chickpeas or tofu.
  • Adjust the amount of curry powder to taste for more or less spice.
