Ingredients
- Boneless skinless chicken breasts
- Chicken broth
- Curry powder
- Cooked rice
- Carrots (diced)
- Potatoes (diced)
- Onion (chopped)
- Garlic (minced)
- Apple (finely diced)
- Coconut milk
- Butter or oil
- Salt & black pepper
- Fresh parsley or cilantro
Instructions
- In a large pot, heat butter or oil over medium. Sauté onion, garlic, carrots, and potatoes for 5–6 minutes until slightly softened.
- Stir in curry powder and cook 1 minute to bloom the spices.
- Add diced apple, chicken breasts, and chicken broth. Bring to a gentle boil, then reduce to simmer for 20 minutes.
- Remove chicken, shred with forks, and return to the pot.
- Stir in cooked rice and a splash of coconut milk for creaminess. Simmer 5–10 minutes until thick and golden.
- Season with salt and pepper. Garnish with fresh parsley or cilantro before serving.
Notes
- For a vegetarian version, substitute chicken with chickpeas or tofu.
- Adjust the amount of curry powder to taste for more or less spice.
- Serve with crusty bread for a complete meal.
