Description

Ingredients

  • 1 can white beans (cannellini or navy)
  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon red pepper flakes
  • Salt, to taste
  • Black pepper, to taste
  • Grated Parmesan, optional

Instructions

  1. Heat olive oil in a skillet over medium heat; sauté onion until soft and translucent.
  2. Add garlic and red pepper flakes; cook until fragrant.
  3. Stir in white beans and cook until warmed and lightly golden.
  4. Add cherry tomatoes and cook until slightly blistered.
  5. Fold in spinach and cook just until wilted.
  6. Season with salt, pepper, lemon juice, and zest.
  7. Finish with Parmesan if using and serve warm as a bowl or side.

Notes

  • For a vegan option, omit the Parmesan.
  • Adjust the amount of red pepper flakes to control the heat level.
