Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss whole baby potatoes with olive oil, smashed garlic, rosemary, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Roast for 25 minutes until starting to blister and brown.
  5. Flip potatoes and roast another 15–20 minutes until deeply golden and crisp.
