Ingredients
- Large shrimp (peeled & deveined)
- Cooked cold rice
- Garlic (minced)
- Butter
- Eggs (scrambled into the rice)
- Peas & carrots
- Green onions
- Soy sauce
- Sesame oil
- Paprika or chili powder
- Salt & pepper
- Lemon wedge (optional)
Instructions
- Season shrimp with salt, pepper, paprika, and a little oil; sear in a hot pan with butter until charred and just cooked. Set aside.
- Add more butter and garlic to the pan; sauté peas, carrots, and green onions.
- Push veggies aside, scramble eggs in the same pan, then mix everything together.
- Add cold rice and toss on high heat until coated and sizzling.
- Season with soy sauce, sesame oil, salt, and pepper.
- Pile the charred shrimp generously on top of the fried rice.
- Finish with fresh green onions and a squeeze of lemon if desired.
Notes
- For best results, use day-old rice that has been refrigerated.
- Adjust seasoning to taste based on personal preference.
