Ingredients

  • Large shrimp (peeled & deveined)
  • Cooked cold rice
  • Garlic (minced)
  • Butter
  • Eggs (scrambled into the rice)
  • Peas & carrots
  • Green onions
  • Soy sauce
  • Sesame oil
  • Paprika or chili powder
  • Salt & pepper
  • Lemon wedge (optional)

Instructions

  1. Season shrimp with salt, pepper, paprika, and a little oil; sear in a hot pan with butter until charred and just cooked. Set aside.
  2. Add more butter and garlic to the pan; sauté peas, carrots, and green onions.
  3. Push veggies aside, scramble eggs in the same pan, then mix everything together.
  4. Add cold rice and toss on high heat until coated and sizzling.
  5. Season with soy sauce, sesame oil, salt, and pepper.
  6. Pile the charred shrimp generously on top of the fried rice.
  7. Finish with fresh green onions and a squeeze of lemon if desired.
