A rich, savory meatloaf infused with caramelized onions and topped with melty cheese and onion gravy.
Ingredients

- 1 lb Ground beef
- 2 cups Caramelized onions
- 1 cup Gruyère or Swiss cheese
- 1 cup Beef broth
- 2 Eggs
- 1 cup Breadcrumbs
- 2 tbsp Worcestershire sauce
- 2 cloves Garlic
- 2 tbsp Butter
- 1 tsp Thyme
- Salt & pepper to taste
Instructions
- Slowly caramelize sliced onions in butter with garlic and thyme until golden and soft.
- Mix ground beef with breadcrumbs, eggs, Worcestershire, salt, pepper, and half the caramelized onions.
- Shape into a loaf and bake at 375°F for 45–55 minutes.
- Meanwhile, make onion gravy by simmering remaining caramelized onions with beef broth until slightly thickened.
- Remove loaf from oven, top with sliced cheese, and broil briefly to melt.
- Pour onion gravy over the top for a glossy finish.
- Sprinkle with fresh thyme or parsley and slice to serve.
Notes
- For best flavor, use freshly caramelized onions.
- Feel free to substitute ground turkey for a lighter option.
- Serve with mashed potatoes or a side salad for a complete meal.
