Description
Crispy on the outside, tender and cheesy inside — these golden squash tots pair perfectly with a cool, herby yogurt dip.
Ingredients

- 2 cups Yellow squash, grated
- 1 cup Cheddar cheese, shredded
- 1 Egg
- 1 cup Breadcrumbs
- 1 tsp Garlic powder
- 2 tbsp Fresh dill or parsley, chopped
- Salt & pepper to taste
- 1 cup Greek yogurt
- 2 tbsp Lemon juice
- 1 tbsp Olive oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate the squash, squeeze out excess water using a clean towel.
- In a bowl, combine squash, cheese, egg, breadcrumbs, garlic powder, salt, pepper, and herbs until mixture holds together.
- Shape into small tot-sized logs and place on the baking sheet.
- Brush lightly with olive oil and bake for 20–25 minutes, turning halfway until golden brown.
- For the dip, mix Greek yogurt, lemon juice, chopped dill, salt, and pepper.
- Serve hot tots with a chilled zesty yogurt dip on the side.
Notes
- Make sure to squeeze out as much water from the squash as possible for crispier tots.
- Feel free to substitute herbs based on your preference.
- These tots can be made ahead and reheated in the oven for a quick snack.
