Description

Crispy on the outside, tender and cheesy inside — these golden squash tots pair perfectly with a cool, herby yogurt dip.


Ingredients

Scale
  • 2 cups Yellow squash, grated
  • 1 cup Cheddar cheese, shredded
  • 1 Egg
  • 1 cup Breadcrumbs
  • 1 tsp Garlic powder
  • 2 tbsp Fresh dill or parsley, chopped
  • Salt & pepper to taste
  • 1 cup Greek yogurt
  • 2 tbsp Lemon juice
  • 1 tbsp Olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the squash, squeeze out excess water using a clean towel.
  3. In a bowl, combine squash, cheese, egg, breadcrumbs, garlic powder, salt, pepper, and herbs until mixture holds together.
  4. Shape into small tot-sized logs and place on the baking sheet.
  5. Brush lightly with olive oil and bake for 20–25 minutes, turning halfway until golden brown.
  6. For the dip, mix Greek yogurt, lemon juice, chopped dill, salt, and pepper.
  7. Serve hot tots with a chilled zesty yogurt dip on the side.

Notes

  • Make sure to squeeze out as much water from the squash as possible for crispier tots.
  • Feel free to substitute herbs based on your preference.
  • These tots can be made ahead and reheated in the oven for a quick snack.
