Ingredients

  • Bone-in chicken thighs or drumsticks
  • Plain Greek yogurt
  • Tandoori spice blend
  • Fresh lemon juice
  • Garlic (minced)
  • Fresh ginger (grated)
  • Smoked paprika
  • Cayenne pepper (optional heat)
  • Salt
  • Vegetable oil
  • Fresh cilantro (for garnish)

Instructions

  1. In a large bowl, mix yogurt, tandoori spice, lemon juice, garlic, ginger, paprika, cayenne, salt, and a drizzle of oil.
  2. Pat chicken dry and score lightly with shallow cuts. Coat thoroughly in the marinade. Marinate at least 30 minutes (or up to overnight).
  3. Preheat oven to 425°F and line a baking sheet with foil and a rack if available.
  4. Arrange chicken pieces spaced apart and roast 30–40 minutes until cooked through and slightly charred on the edges.
  5. Broil 2–3 minutes for extra smoky caramelization.
  6. Garnish with fresh cilantro and serve hot with lemon wedges.
