Ingredients
- Bone-in chicken thighs or drumsticks
- Plain Greek yogurt
- Tandoori spice blend
- Fresh lemon juice
- Garlic (minced)
- Fresh ginger (grated)
- Smoked paprika
- Cayenne pepper (optional heat)
- Salt
- Vegetable oil
- Fresh cilantro (for garnish)
Instructions
- In a large bowl, mix yogurt, tandoori spice, lemon juice, garlic, ginger, paprika, cayenne, salt, and a drizzle of oil.
- Pat chicken dry and score lightly with shallow cuts. Coat thoroughly in the marinade. Marinate at least 30 minutes (or up to overnight).
- Preheat oven to 425°F and line a baking sheet with foil and a rack if available.
- Arrange chicken pieces spaced apart and roast 30–40 minutes until cooked through and slightly charred on the edges.
- Broil 2–3 minutes for extra smoky caramelization.
- Garnish with fresh cilantro and serve hot with lemon wedges.
Notes
- For best flavor, marinate the chicken overnight.
- Adjust cayenne pepper to control the heat level.
- Serve with naan or rice for a complete meal.
