Ingredients

  • Mascarpone cheese
  • Pistachio paste or finely ground pistachios
  • Ladyfinger biscuits (savoiardi)
  • Heavy cream
  • Sugar
  • Vanilla extract
  • Milk (or light coffee, optional)
  • Chopped pistachios (topping)
  • Cocoa powder or pistachio dust (for finish)

Instructions

  1. Whip cold cream with sugar and vanilla until soft peaks form.
  2. Gently fold mascarpone into the whipped cream until smooth.
  3. Mix pistachio paste into half of the cream for a pale green filling.
  4. Quickly dip ladyfingers into milk (or coffee) and line the base of a dish.
  5. Spread a layer of pistachio cream, then repeat with soaked biscuits.
  6. Finish with a thick top layer of cream and smooth evenly.
  7. Chill at least 6 hours; garnish with chopped pistachios before serving.
