- 1 lb Ground chicken
- 1/4 cup Sweet chili sauce
- 1 tbsp Fresh ginger, minced
- 1 stalk Lemongrass, minced (or 1 tsp lemongrass paste)
- 3 cloves Garlic, minced
- 2 Green onions, chopped
- 1/4 cup Fresh cilantro, chopped
- 2 tbsp Soy sauce or fish sauce
- 1 Egg
- 1/2 cup Panko breadcrumbs
- 1 tbsp Sesame oil
- Red chili flakes (optional, to taste)
Instructions
- Preheat oven to 400°F (205°C) and line a baking sheet with parchment.
- In a bowl, combine ground chicken, egg, panko, garlic, ginger, and lemongrass.
- Mix in sweet chili sauce, soy or fish sauce, sesame oil, and chili flakes.
- Fold in chopped green onions and cilantro until just combined.
- Roll mixture into evenly sized meatballs and place on baking sheet.
- Bake for 18–22 minutes, turning once, until golden and cooked through.
- Brush with extra sweet chili sauce and garnish with herbs before serving.
Notes
- For a spicier kick, add more red chili flakes.
- Serve with extra sweet chili sauce for dipping.
- These meatballs can be stored in the refrigerator for up to 3 days.
