Ingredients

  • Puff pastry sheets
  • Eggs
  • Cream cheese
  • Fresh spinach
  • Olive oil
  • Shallot, minced
  • Garlic cloves, minced
  • Heavy cream
  • Parmesan cheese
  • Nutmeg

Instructions

  1. Thaw puff pastry, cut into squares, and bake until golden and puffed. Set aside.
  2. Sauté shallot and garlic in olive oil until fragrant; add spinach and wilt completely.
  3. Stir in cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper until smooth.
  4. Layer puff pastry with creamy spinach mixture, creating a stacked “Napoleon” shape.
  5. Create a small well on top and carefully crack an egg into each stack.
  6. Bake until egg whites are set but yolks remain jammy.
