Instructions
- Thaw puff pastry, cut into squares, and bake until golden and puffed. Set aside.
- Sauté shallot and garlic in olive oil until fragrant; add spinach and wilt completely.
- Stir in cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper until smooth.
- Layer puff pastry with creamy spinach mixture, creating a stacked “Napoleon” shape.
- Create a small well on top and carefully crack an egg into each stack.
- Bake until egg whites are set but yolks remain jammy.
- Finish with chives and everything bagel seasoning before serving.
