Ingredients

  • All-purpose flour (3 cups)
  • Warm milk (¾ cup)
  • Active dry yeast (2¼ tsp)
  • Purple food coloring or ube extract (1 tsp)
  • Sugar (¼ cup)
  • Butter (4 tbsp, softened)
  • Egg (1 large)
  • Cocoa powder (2 tbsp)
  • Brown sugar (¼ cup)
  • Ground cinnamon (1 tsp)
  • Black food coloring (optional for swirl)

Instructions

  1. Activate yeast in warm milk with 1 tbsp sugar; rest until foamy.
  2. In a bowl, mix flour, remaining sugar, butter, egg, and purple coloring; add yeast mixture and knead until soft.
  3. Cover and let rise 1 hour, or until doubled.
  4. In a small bowl, mix cocoa, brown sugar, cinnamon, and a dab of butter (plus black coloring if desired) for the filling.
  5. Roll dough into a rectangle, spread the dark filling evenly, and roll tightly into a log.
  6. Slice into 9 rolls and arrange in a greased pan. Cover and rise 30 min.
  7. Bake at 350°F for 20–25 min until puffy and aromatic; glaze lightly if desired.
