Ingredients
- All-purpose flour (3 cups)
- Warm milk (¾ cup)
- Active dry yeast (2¼ tsp)
- Purple food coloring or ube extract (1 tsp)
- Sugar (¼ cup)
- Butter (4 tbsp, softened)
- Egg (1 large)
- Cocoa powder (2 tbsp)
- Brown sugar (¼ cup)
- Ground cinnamon (1 tsp)
- Black food coloring (optional for swirl)
Instructions
- Activate yeast in warm milk with 1 tbsp sugar; rest until foamy.
- In a bowl, mix flour, remaining sugar, butter, egg, and purple coloring; add yeast mixture and knead until soft.
- Cover and let rise 1 hour, or until doubled.
- In a small bowl, mix cocoa, brown sugar, cinnamon, and a dab of butter (plus black coloring if desired) for the filling.
- Roll dough into a rectangle, spread the dark filling evenly, and roll tightly into a log.
- Slice into 9 rolls and arrange in a greased pan. Cover and rise 30 min.
- Bake at 350°F for 20–25 min until puffy and aromatic; glaze lightly if desired.
Notes
- Ensure the milk is warm but not hot to avoid killing the yeast.
- For a more intense color, adjust the amount of purple food coloring.
- These rolls can be glazed with a simple icing for added sweetness.
