Description

Ingredients

  • Chicken thighs (boneless)
  • Brioche buns
  • Thai chili mayo (mayo + sweet chili sauce + sriracha)
  • Cornstarch/flour breading mix
  • Eggs (for dredging)
  • Garlic powder
  • Salt & pepper
  • Green onions
  • Shredded lettuce
  • Red onion slices

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Dredge in a flour–cornstarch mix, dip in beaten eggs, then coat again in flour for an extra-crispy crust.
  3. Fry at 350°F until golden and crunchy; drain on a rack.
  4. Whisk mayo, sweet chili sauce, and sriracha into a creamy Thai-style sauce.
  5. Toast brioche buns until lightly bronzed.
  6. Layer lettuce and red onion on the bottom bun, add hot crispy chicken, and spoon on plenty of Thai sauce.
  7. Sprinkle sliced green onion on top, press with the bun lid, and serve immediately.

Notes

  • For extra crunch, double coat the chicken in the flour-cornstarch mix.
  • Adjust the spiciness of the sauce by varying the amount of sriracha.
  • Serve with additional Thai sauce on the side for dipping.
