Ingredients
- Chicken thighs (boneless)
- Brioche buns
- Thai chili mayo (mayo + sweet chili sauce + sriracha)
- Cornstarch/flour breading mix
- Eggs (for dredging)
- Garlic powder
- Salt & pepper
- Green onions
- Shredded lettuce
- Red onion slices
Instructions
- Season chicken with salt, pepper, and garlic powder.
- Dredge in a flour–cornstarch mix, dip in beaten eggs, then coat again in flour for an extra-crispy crust.
- Fry at 350°F until golden and crunchy; drain on a rack.
- Whisk mayo, sweet chili sauce, and sriracha into a creamy Thai-style sauce.
- Toast brioche buns until lightly bronzed.
- Layer lettuce and red onion on the bottom bun, add hot crispy chicken, and spoon on plenty of Thai sauce.
- Sprinkle sliced green onion on top, press with the bun lid, and serve immediately.
Notes
- For extra crunch, double coat the chicken in the flour-cornstarch mix.
- Adjust the spiciness of the sauce by varying the amount of sriracha.
- Serve with additional Thai sauce on the side for dipping.
