Ingredients

  • Chicken thighs or breasts
  • Buttermilk
  • All-purpose flour
  • Cayenne pepper
  • Paprika
  • Garlic powder
  • Onion powder
  • Salt & black pepper
  • Hot sauce (for marinade)
  • Eggs
  • Vegetable or peanut oil (for frying)
  • Fresh parsley (optional garnish)

Instructions

  1. Marinate chicken in buttermilk, hot sauce, salt, and pepper for at least 1 hour (or overnight).
  2. Whisk flour with paprika, cayenne, garlic powder, onion powder, salt, and pepper.
  3. Remove chicken from marinade and dredge thoroughly in seasoned flour.
  4. Dip back into buttermilk, then flour again for extra crunch.
  5. Heat oil to 350°F / 175°C in a deep skillet.
  6. Fry chicken in batches until deep golden and cooked through.
  7. Drain on a rack, rest briefly, and serve hot.
