- 1 cup sauerkraut (drained well)
- 1 cup Swiss cheese (shredded)
- 1/2 cup cream cheese
- 1 cup bread crumbs (for coating)
- 2 eggs (for binding)
- 1/2 cup flour (for dredging)
- Oil for frying
- Chives (for garnish)
- Thousand Island dressing (for dipping)
Instructions
- In a bowl, mix corned beef, sauerkraut, Swiss cheese, and cream cheese until well combined.
- Form mixture into small balls and chill for 15–20 minutes to firm.
- Dredge each ball in flour, dip in beaten egg, then coat in bread crumbs.
- Heat oil to 375°F (190°C) and fry until golden brown and crispy, about 2–3 minutes per side.
- Drain on paper towels and sprinkle with chopped chives.
- Serve warm with spicy Thousand Island dipping sauce.
- Enjoy while the cheese is hot and gooey!
Notes
- Make sure to drain the sauerkraut well to avoid excess moisture.
- Chilling the balls helps them hold their shape while frying.
