Description

Golden, melty bites packed with corned beef, sauerkraut, and Swiss cheese — served with a spicy Thousand Island dip.

Ingredients

Scale
  • 1 cup shredded corned beef
  • 1 cup sauerkraut (drained well)
  • 1 cup Swiss cheese (shredded)
  • 1/2 cup cream cheese
  • 1 cup bread crumbs (for coating)
  • 2 eggs (for binding)
  • 1/2 cup flour (for dredging)
  • Oil for frying
  • Chives (for garnish)
  • Thousand Island dressing (for dipping)

Instructions

  1. In a bowl, mix corned beef, sauerkraut, Swiss cheese, and cream cheese until well combined.
  2. Form mixture into small balls and chill for 15–20 minutes to firm.
  3. Dredge each ball in flour, dip in beaten egg, then coat in bread crumbs.
  4. Heat oil to 375°F (190°C) and fry until golden brown and crispy, about 2–3 minutes per side.
  5. Drain on paper towels and sprinkle with chopped chives.
  6. Serve warm with spicy Thousand Island dipping sauce.
  7. Enjoy while the cheese is hot and gooey!

Notes

  • Make sure to drain the sauerkraut well to avoid excess moisture.
  • Chilling the balls helps them hold their shape while frying.
  • Adjust the spice level of the Thousand Island dressing to your preference.
