Ingredients

- 2 cups cooked shredded chicken
- 4 slices thick-cut bread (sourdough or brioche)
- 4 slices mozzarella or provolone cheese
- 3 tbsp butter, softened
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 2 tbsp mayonnaise
- 1 tbsp chopped fresh parsley
- Salt & black pepper
- Optional: pinch red pepper flakes
Instructions
- In a skillet, heat olive oil and sauté garlic until fragrant. Add shredded chicken, season with salt, pepper, and parsley; warm through.
- Mix softened butter with a pinch of garlic and parsley. Spread evenly on the outside of each bread slice.
- Spread a thin layer of mayonnaise on the inside of the bread for extra creaminess.
- Layer cheese, warm chicken mixture, then another slice of cheese before topping with bread.
- Cook sandwiches in a skillet over medium heat, pressing gently, until bread is golden brown.
- Flip and cook until the second side is crisp and cheese is fully melted.
- Rest 2 minutes, then slice and serve hot.
Notes
- For extra flavor, add a pinch of red pepper flakes to the chicken mixture.
- Ensure the skillet is preheated to achieve a crispy texture.
