Ingredients
- Boneless chicken breasts (4, pounded thin)
- Deli ham slices (4)
- Swiss cheese slices (4)
- Breadcrumbs (1 cup)
- Flour (½ cup)
- Eggs (2, beaten)
- Butter (2 tbsp, melted)
- Dijon mustard (1 tbsp, optional)
- Salt & pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- Prep the chicken: Lay each chicken breast flat, season with salt and pepper, and layer with a slice of ham and cheese.
- Roll & secure: Roll tightly from one end, securing with toothpicks or kitchen twine.
- Coat: Dredge each roll in flour, dip in beaten eggs, then coat with breadcrumbs.
- Bake or pan-fry: Place on a greased baking sheet, brush with melted butter, and bake 25–30 minutes until golden and cooked through. (Or pan-fry until golden, then finish in the oven.)
- Rest: Let rest a few minutes before slicing.
- Optional sauce: Whisk together a quick Dijon cream sauce with 1 cup cream, 1 tbsp mustard, and a pinch of salt over low heat.
- Serve hot: Slice into rounds, drizzle with sauce, and garnish with chopped parsley.
