- 1 cup shredded cheddar cheese
- ½ cup cooked bacon bits
- 1 egg
- ½ cup breadcrumbs (panko preferred)
- 2 tbsp chopped chives
- Salt and pepper to taste
- Oil for frying
- Spicy mayo or cheese sauce for dipping
Instructions
- In a bowl, mix mashed potatoes, cheddar, bacon, egg, chives, salt, and pepper.
- Shape the mixture into small balls and chill for 15 minutes to firm up.
- Roll each ball in breadcrumbs until fully coated.
- Heat oil in a pan to 375°F (190°C) and fry potato bites until golden and crisp, about 3–4 minutes per side.
- Drain on paper towels to remove excess oil.
- Serve warm, sprinkled with extra chives.
- Dip in spicy mayo or melted cheese sauce for the ultimate bite.
Notes
- For extra flavor, consider adding garlic powder or onion powder to the potato mixture.
- These bites can be made ahead of time and frozen before frying.
