Description

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon bits
  • 1 egg
  • ½ cup breadcrumbs (panko preferred)
  • 2 tbsp chopped chives
  • Salt and pepper to taste
  • Oil for frying
  • Spicy mayo or cheese sauce for dipping

Instructions

  1. In a bowl, mix mashed potatoes, cheddar, bacon, egg, chives, salt, and pepper.
  2. Shape the mixture into small balls and chill for 15 minutes to firm up.
  3. Roll each ball in breadcrumbs until fully coated.
  4. Heat oil in a pan to 375°F (190°C) and fry potato bites until golden and crisp, about 3–4 minutes per side.
  5. Drain on paper towels to remove excess oil.
  6. Serve warm, sprinkled with extra chives.
  7. Dip in spicy mayo or melted cheese sauce for the ultimate bite.
