Description

A cozy, creamy bowl packed with tender chicken, lasagna noodles, and Italian herbs.


Ingredients

  • Boneless skinless chicken breasts (shredded)
  • Lasagna noodles (broken into pieces)
  • Heavy cream
  • Fresh spinach
  • Chicken broth
  • Yellow onion (diced)
  • Garlic (minced)
  • Diced tomatoes
  • Italian seasoning
  • Parmesan cheese (grated)
  • Olive oil
  • Salt & black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and garlic until fragrant and translucent.
  2. Add chicken broth and chicken breasts. Simmer 15–20 minutes until fully cooked, then remove and shred.
  3. Stir in broken lasagna noodles, diced tomatoes, and Italian seasoning. Simmer until noodles are tender.
  4. Return shredded chicken to the pot and lower heat.
  5. Stir in heavy cream and grated Parmesan until the soup becomes rich and creamy.
  6. Add fresh spinach and cook just until wilted. Season with salt and pepper.
  7. Ladle into bowls and garnish with extra Parmesan and herbs.

Notes

  • For a vegetarian version, substitute chicken with mushrooms or other vegetables.
  • Adjust the thickness of the soup by adding more or less chicken broth.
  • Can be stored in the refrigerator for up to 3 days.
