A cozy, creamy bowl packed with tender chicken, lasagna noodles, and Italian herbs.
Ingredients
- Boneless skinless chicken breasts (shredded)
- Lasagna noodles (broken into pieces)
- Heavy cream
- Fresh spinach
- Chicken broth
- Yellow onion (diced)
- Garlic (minced)
- Diced tomatoes
- Italian seasoning
- Parmesan cheese (grated)
- Olive oil
- Salt & black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion and garlic until fragrant and translucent.
- Add chicken broth and chicken breasts. Simmer 15–20 minutes until fully cooked, then remove and shred.
- Stir in broken lasagna noodles, diced tomatoes, and Italian seasoning. Simmer until noodles are tender.
- Return shredded chicken to the pot and lower heat.
- Stir in heavy cream and grated Parmesan until the soup becomes rich and creamy.
- Add fresh spinach and cook just until wilted. Season with salt and pepper.
- Ladle into bowls and garnish with extra Parmesan and herbs.
Notes
- For a vegetarian version, substitute chicken with mushrooms or other vegetables.
- Adjust the thickness of the soup by adding more or less chicken broth.
- Can be stored in the refrigerator for up to 3 days.
