Ingredients

  • 4 Salmon fillets
  • 2 tablespoons Butter
  • 1 cup Heavy cream
  • 4 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, chopped
  • 2 cups Spinach
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • Salt & pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Lemon juice (optional)

Instructions

  1. Season salmon with salt, pepper, and Italian seasoning; sear in olive oil until golden on both sides, then remove from pan.
  2. Melt butter in the same skillet and sauté garlic until fragrant.
  3. Stir in sun-dried tomatoes, then pour in heavy cream and Parmesan; simmer until thickened.
  4. Add spinach and cook until wilted.
  5. Return salmon to the skillet, spoon sauce over the fillets, and simmer for 3–5 minutes.
  6. Add a squeeze of lemon if desired for brightness.
  7. Serve hot with extra sauce over rice, pasta, or crusty bread.
