- 4 Salmon fillets
- 2 tablespoons Butter
- 1 cup Heavy cream
- 4 cloves Garlic, minced
- 1/2 cup Sun-dried tomatoes, chopped
- 2 cups Spinach
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons Olive oil
- Salt & pepper to taste
- 1 teaspoon Italian seasoning
- 1 tablespoon Lemon juice (optional)
Instructions
- Season salmon with salt, pepper, and Italian seasoning; sear in olive oil until golden on both sides, then remove from pan.
- Melt butter in the same skillet and sauté garlic until fragrant.
- Stir in sun-dried tomatoes, then pour in heavy cream and Parmesan; simmer until thickened.
- Add spinach and cook until wilted.
- Return salmon to the skillet, spoon sauce over the fillets, and simmer for 3–5 minutes.
- Add a squeeze of lemon if desired for brightness.
- Serve hot with extra sauce over rice, pasta, or crusty bread.

- For a lighter version, you can substitute half-and-half for heavy cream.
- Feel free to add other vegetables like bell peppers or mushrooms.
