- 4 cups Fresh baby spinach
- 1 cup Sour cream
- 1 cup Mayonnaise
- 1 can (14 oz) Artichoke hearts (chopped)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Dried parsley
- Salt & pepper to taste
Instructions
- Cook penne pasta in salted water until al dente; drain and cool completely.
- Roughly chop spinach and artichoke hearts.
- In a large bowl, whisk sour cream, mayonnaise, garlic powder, onion powder, parsley, salt, and pepper until smooth.
- Add cooled pasta to the dressing and toss to coat.
- Fold in spinach and artichokes until evenly distributed.
- Chill for at least 10 minutes to let flavors blend.
- Stir once more before serving and adjust seasoning if needed.
