Description

A cozy, dip-inspired stew that turns classic spinach-artichoke flavors into a hearty dinner bowl.


Ingredients

  • 2 Boneless skinless chicken breasts
  • 1 can Artichoke hearts
  • 2 cups Fresh spinach
  • 1 cup Heavy cream
  • 2 tablespoons Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth
  • 4 ounces Cream cheese
  • 1/2 cup Grated Parmesan
  • 1 teaspoon Dried Italian herbs
  • Salt & black pepper to taste

Instructions

  1. Heat olive oil in a deep skillet or pot over medium heat; sauté diced onion until soft.
  2. Add minced garlic and Italian herbs; cook until fragrant.
  3. Add cubed chicken, season with salt and pepper, and lightly brown on all sides.
  4. Pour in chicken broth and simmer for 10 minutes until chicken is cooked through.
  5. Stir in cream cheese and heavy cream until fully melted and smooth.
  6. Add chopped artichokes and fresh spinach; simmer until spinach wilts.
  7. Finish with Parmesan, adjust seasoning, and serve warm.

Notes

  • For a thicker stew, add more cream cheese.
  • Can substitute chicken with turkey or tofu for a different protein option.
