- 2 Boneless skinless chicken breasts
- 1 can Artichoke hearts
- 2 cups Fresh spinach
- 1 cup Heavy cream
- 2 tablespoons Olive oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 cups Chicken broth
- 4 ounces Cream cheese
- 1/2 cup Grated Parmesan
- 1 teaspoon Dried Italian herbs
- Salt & black pepper to taste
Instructions
- Heat olive oil in a deep skillet or pot over medium heat; sauté diced onion until soft.
- Add minced garlic and Italian herbs; cook until fragrant.
- Add cubed chicken, season with salt and pepper, and lightly brown on all sides.
- Pour in chicken broth and simmer for 10 minutes until chicken is cooked through.
- Stir in cream cheese and heavy cream until fully melted and smooth.
- Add chopped artichokes and fresh spinach; simmer until spinach wilts.
- Finish with Parmesan, adjust seasoning, and serve warm.
Notes
- For a thicker stew, add more cream cheese.
- Can substitute chicken with turkey or tofu for a different protein option.
- Serve with crusty bread for dipping.
