- 12 oz rigatoni pasta
- 1 cup heavy cream
- 1 cup crushed tomatoes
- 1 small ball burrata or mozzarella
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ tsp red pepper flakes
- ½ tsp Italian seasoning
- ¼ cup grated Parmesan
- 2 tbsp chopped parsley
- Salt & pepper to taste
Instructions
- Cook rigatoni until al dente; reserve ½ cup of pasta water.
- In a skillet, heat olive oil and sauté garlic with red pepper flakes until fragrant.
- Add crushed tomatoes, cream, Italian seasoning, salt, and pepper; simmer for 8–10 minutes until thickened.
- Stir in Parmesan and pasta water to create a silky sauce.
- Toss in the cooked rigatoni until fully coated.
- Serve hot topped with burrata, chopped parsley, and a sprinkle of extra chili flakes.
- Mix in the burrata just before eating for creamy, spicy perfection.
Notes
- Adjust the amount of red pepper flakes to control the spice level.
- For a lighter version, substitute heavy cream with half-and-half.
- Fresh basil can be used instead of parsley for added flavor.
