Description

Creamy Spicy Tomato Rigatoni is a delicious pasta dish featuring al dente rigatoni tossed in a velvety tomato cream sauce with a kick of chili and topped with melting burrata.


Ingredients

  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup crushed tomatoes
  • 1 small ball burrata or mozzarella
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • ½ tsp Italian seasoning
  • ¼ cup grated Parmesan
  • 2 tbsp chopped parsley
  • Salt & pepper to taste

Instructions

  1. Cook rigatoni until al dente; reserve ½ cup of pasta water.
  2. In a skillet, heat olive oil and sauté garlic with red pepper flakes until fragrant.
  3. Add crushed tomatoes, cream, Italian seasoning, salt, and pepper; simmer for 8–10 minutes until thickened.
  4. Stir in Parmesan and pasta water to create a silky sauce.
  5. Toss in the cooked rigatoni until fully coated.
  6. Serve hot topped with burrata, chopped parsley, and a sprinkle of extra chili flakes.
  7. Mix in the burrata just before eating for creamy, spicy perfection.

Notes

  • Adjust the amount of red pepper flakes to control the spice level.
  • For a lighter version, substitute heavy cream with half-and-half.
  • Fresh basil can be used instead of parsley for added flavor.
