Ingredients

Scale
  • 1 cup Smoked Gouda cheese, shredded
  • 4 cups Cauliflower florets
  • 1 cup Heavy cream (or coconut milk)
  • 1 tsp Smoked paprika
  • 2 tbsp Olive oil
  • 1 Onion, diced
  • 3 Garlic cloves, minced
  • 4 cups Vegetable broth
  • Salt, to taste
  • Black pepper, to taste
  • Fresh thyme (optional)
  • Roasted chickpeas (for topping)

Instructions

  1. Heat olive oil in a pot over medium heat; sauté onion until soft and translucent.
  2. Add garlic and smoked paprika; cook briefly until fragrant.
  3. Add cauliflower and vegetable broth; simmer until cauliflower is very tender.
  4. Blend soup until completely smooth and creamy.
  5. Return to low heat and stir in cream (or coconut milk).
  6. Add shredded smoked Gouda and stir until fully melted.
  7. Season with salt and pepper, then serve topped with roasted chickpeas and herbs.

Notes

  • For a vegan option, use coconut milk and omit the cheese or use a vegan cheese alternative.
  • Adjust the thickness of the soup by adding more or less vegetable broth.
