- 1 cup Smoked Gouda cheese, shredded
- 4 cups Cauliflower florets
- 1 cup Heavy cream (or coconut milk)
- 1 tsp Smoked paprika
- 2 tbsp Olive oil
- 1 Onion, diced
- 3 Garlic cloves, minced
- 4 cups Vegetable broth
- Salt, to taste
- Black pepper, to taste
- Fresh thyme (optional)
- Roasted chickpeas (for topping)
Instructions
- Heat olive oil in a pot over medium heat; sauté onion until soft and translucent.
- Add garlic and smoked paprika; cook briefly until fragrant.
- Add cauliflower and vegetable broth; simmer until cauliflower is very tender.
- Blend soup until completely smooth and creamy.
- Return to low heat and stir in cream (or coconut milk).
- Add shredded smoked Gouda and stir until fully melted.
- Season with salt and pepper, then serve topped with roasted chickpeas and herbs.
Notes
- For a vegan option, use coconut milk and omit the cheese or use a vegan cheese alternative.
- Adjust the thickness of the soup by adding more or less vegetable broth.
- Roasted chickpeas add a nice crunch on top.
