Instructions
- Melt butter with olive oil in a pot; sauté onion and celery until soft.
- Add mushrooms and cook until browned and moisture releases.
- Stir in garlic and thyme; cook until fragrant.
- Sprinkle in flour and cook briefly to form a light roux.
- Slowly add broth, stirring until smooth and thickened.
- Pour in cream and simmer gently until velvety.
- Season to taste and serve warm.

- For a vegan version, substitute heavy cream with coconut cream and use vegetable broth.
- Fresh herbs can enhance the flavor; consider adding parsley or chives.
