Description

A cozy, creamy vegetarian skillet with tender lentils, sweet leeks, fresh herbs, and a bright hint of lime.


Ingredients

Scale
  • 2 cups cooked brown or green lentils
  • 2 leeks, cleaned and sliced into rings
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 cup cream or plant-based cream
  • 1/4 cup fresh parsley, chopped
  • Zest and juice of 1 lime
  • Salt & black pepper to taste
  • Chili flakes (optional)
  • Rustic bread (for serving)

Instructions

  1. Clean and slice leeks into rings; rinse well.
  2. Heat olive oil in a wide skillet and sauté leeks until soft and lightly golden.
  3. Add garlic and cook briefly until fragrant.
  4. Stir in lentils and warm through.
  5. Pour in vegetable broth and simmer for 10–15 minutes.
  6. Add cream and Dijon; simmer gently until creamy.
  7. Finish with parsley, lime zest, lime juice, and seasoning; serve hot.

Notes

  • Chili flakes can be added for extra heat.
  • Serve with rustic bread for a complete meal.
