Ingredients

- 2 cups cooked brown or green lentils
- 2 leeks, cleaned and sliced into rings
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 cup cream or plant-based cream
- 1/4 cup fresh parsley, chopped
- Zest and juice of 1 lime
- Salt & black pepper to taste
- Chili flakes (optional)
- Rustic bread (for serving)
Instructions
- Clean and slice leeks into rings; rinse well.
- Heat olive oil in a wide skillet and sauté leeks until soft and lightly golden.
- Add garlic and cook briefly until fragrant.
- Stir in lentils and warm through.
- Pour in vegetable broth and simmer for 10–15 minutes.
- Add cream and Dijon; simmer gently until creamy.
- Finish with parsley, lime zest, lime juice, and seasoning; serve hot.
Notes
- Chili flakes can be added for extra heat.
- Serve with rustic bread for a complete meal.
