Ingredients

  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • Ground cinnamon (for topping)

Instructions

  1. In a saucepan over medium-low heat, combine cooked rice, whole milk, sugar, and a pinch of salt.
  2. Simmer gently, stirring often, until thickened and creamy (about 20–25 minutes).
  3. In a small bowl, whisk egg with heavy cream. Slowly temper with a few spoonfuls of hot rice mixture.
  4. Stir the egg mixture back into the saucepan and cook 2–3 minutes until extra thick and silky.
  5. Remove from heat and stir in butter and vanilla extract.
  6. Spoon into serving dishes while warm or chill until set and creamy.
  7. Dust lightly with cinnamon before serving.
