- 2 cups cooked white rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/2 cup heavy cream
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- 1/4 teaspoon salt
- Ground cinnamon (for topping)
Instructions
- In a saucepan over medium-low heat, combine cooked rice, whole milk, sugar, and a pinch of salt.
- Simmer gently, stirring often, until thickened and creamy (about 20–25 minutes).
- In a small bowl, whisk egg with heavy cream. Slowly temper with a few spoonfuls of hot rice mixture.
- Stir the egg mixture back into the saucepan and cook 2–3 minutes until extra thick and silky.
- Remove from heat and stir in butter and vanilla extract.
- Spoon into serving dishes while warm or chill until set and creamy.
- Dust lightly with cinnamon before serving.
Notes
- For a richer flavor, use a combination of whole milk and heavy cream.
- Adjust the sweetness according to your preference.
