Description

Creamy Irish Skillet Chicken with Herb Gravy delights taste buds with golden seared chicken smothered in a rich, velvety Irish-style cream sauce.


Ingredients

  • 4 Boneless skinless chicken breasts or thighs
  • 2 tablespoons Irish butter
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 3 cloves Garlic, minced
  • 1 Onion, finely diced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Fresh thyme
  • 1 cup Mushrooms (optional)
  • Salt & black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken generously with salt and pepper. Melt Irish butter in a skillet and sear chicken on medium heat until golden brown on both sides. Remove and set aside.
  2. In the same skillet, sauté onion and garlic until soft and fragrant. Add mushrooms if using and cook until lightly browned.
  3. Pour in chicken broth, scraping up browned bits from the pan. Stir in Dijon and thyme.
  4. Lower heat and stir in heavy cream. Simmer gently until sauce thickens slightly.
  5. Place chicken back into the skillet and spoon sauce over the top. Simmer 10–15 minutes until cooked through and tender.
  6. Adjust seasoning and sprinkle with fresh parsley before serving.

  • For a richer flavor, use homemade chicken broth.
  • Feel free to add other herbs like rosemary or sage for variation.
