- 4 Boneless skinless chicken breasts or thighs
- 2 tablespoons Irish butter
- 1 cup Heavy cream
- 1 cup Chicken broth
- 3 cloves Garlic, minced
- 1 Onion, finely diced
- 2 tablespoons Dijon mustard
- 1 tablespoon Fresh thyme
- 1 cup Mushrooms (optional)
- Salt & black pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken generously with salt and pepper. Melt Irish butter in a skillet and sear chicken on medium heat until golden brown on both sides. Remove and set aside.
- In the same skillet, sauté onion and garlic until soft and fragrant. Add mushrooms if using and cook until lightly browned.
- Pour in chicken broth, scraping up browned bits from the pan. Stir in Dijon and thyme.
- Lower heat and stir in heavy cream. Simmer gently until sauce thickens slightly.
- Place chicken back into the skillet and spoon sauce over the top. Simmer 10–15 minutes until cooked through and tender.
- Adjust seasoning and sprinkle with fresh parsley before serving.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add other herbs like rosemary or sage for variation.
- Serve with mashed potatoes or crusty bread to soak up the gravy.
