- 4 Chicken breast cutlets
- 1 cup Whole-milk ricotta cheese
- 1/2 cup Fresh herbs (parsley, basil, thyme)
- 1/2 cup Mozzarella cheese
- 1/4 cup Parmesan cheese
- 2 cloves Garlic, minced
- Zest of 1 Lemon
- 2 tablespoons Olive oil
- Salt & black pepper to taste
- 1 teaspoon Paprika
- Toothpicks or kitchen twine for securing
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, mix ricotta, mozzarella, Parmesan, minced garlic, lemon zest, chopped herbs, salt, and pepper.
- Lay chicken cutlets flat and season both sides with salt, pepper, and paprika.
- Spread ricotta mixture evenly over each cutlet.
- Roll chicken tightly and secure with toothpicks or twine.
- Sear rolls in olive oil until lightly golden, then transfer to baking dish.
- Bake until cooked through and juicy; rest briefly, slice, and serve.
