Description

Juicy chicken cutlets rolled around a luxuriously creamy ricotta-herb filling and baked to golden perfection.


Ingredients

  • 4 Chicken breast cutlets
  • 1 cup Whole-milk ricotta cheese
  • 1/2 cup Fresh herbs (parsley, basil, thyme)
  • 1/2 cup Mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 2 cloves Garlic, minced
  • Zest of 1 Lemon
  • 2 tablespoons Olive oil
  • Salt & black pepper to taste
  • 1 teaspoon Paprika
  • Toothpicks or kitchen twine for securing

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, mix ricotta, mozzarella, Parmesan, minced garlic, lemon zest, chopped herbs, salt, and pepper.
  3. Lay chicken cutlets flat and season both sides with salt, pepper, and paprika.
  4. Spread ricotta mixture evenly over each cutlet.
  5. Roll chicken tightly and secure with toothpicks or twine.
  6. Sear rolls in olive oil until lightly golden, then transfer to baking dish.
  7. Bake until cooked through and juicy; rest briefly, slice, and serve.
