Creamy Elote Comfort Soup is a must-try delight that combines the smoky, tangy flavors of Mexican street corn into a cozy, spoonable bowl.


Ingredients

  • Fresh or frozen corn kernels
  • Shredded chicken (or rotisserie chicken)
  • Heavy cream
  • Cotija cheese
  • Butter
  • Onion, diced
  • Garlic, minced
  • Chicken broth
  • Chili powder
  • Smoked paprika
  • Ground cumin
  • Lime juice
  • Fresh cilantro
  • Salt & pepper

Instructions

  1. Melt butter in a large pot over medium heat; sauté onion until soft, then add garlic.
  2. Stir in chili powder, smoked paprika, and cumin; cook until fragrant.
  3. Add corn and chicken broth; simmer 10–12 minutes.
  4. Stir in shredded chicken and heavy cream; gently simmer another 8–10 minutes.
  5. Season with salt, pepper, and fresh lime juice.
  6. Ladle into bowls and top with cotija cheese and chopped cilantro.
