A bold, smoky, creamy chili loaded with tender chicken, sausage, and Cajun spice.

- 2 cups shredded cooked chicken
- 12 oz smoked sausage, sliced
- 2 cups white beans (cannellini or great northern)
- 2 tbsp Cajun seasoning
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 jalapeño, sliced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 4 oz cream cheese
- 1 cup corn kernels
- Salt & black pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Brown the sliced sausage until slightly crisp; remove and set aside.
- In the same pot, sauté onion, bell pepper, jalapeño, and garlic until soft and fragrant.
- Stir in Cajun seasoning, shredded chicken, white beans, corn, and chicken broth. Bring to a gentle simmer.
- Return sausage to the pot and simmer for 15 minutes to blend flavors.
- Lower heat and stir in cream cheese until melted and smooth.
- Add heavy cream and simmer another 5–8 minutes until thick and creamy. Adjust salt and pepper.
- Serve hot with extra jalapeño slices and cracked black pepper on top.
Notes
- For a spicier chili, add more jalapeño or a dash of hot sauce.
- This dish can be made ahead of time and reheated.
- Serve with crusty bread or over rice for a complete meal.
