Description

A bold, smoky, creamy chili loaded with tender chicken, sausage, and Cajun spice.


Ingredients

  • 2 cups shredded cooked chicken
  • 12 oz smoked sausage, sliced
  • 2 cups white beans (cannellini or great northern)
  • 2 tbsp Cajun seasoning
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, sliced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup corn kernels
  • Salt & black pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Brown the sliced sausage until slightly crisp; remove and set aside.
  2. In the same pot, sauté onion, bell pepper, jalapeño, and garlic until soft and fragrant.
  3. Stir in Cajun seasoning, shredded chicken, white beans, corn, and chicken broth. Bring to a gentle simmer.
  4. Return sausage to the pot and simmer for 15 minutes to blend flavors.
  5. Lower heat and stir in cream cheese until melted and smooth.
  6. Add heavy cream and simmer another 5–8 minutes until thick and creamy. Adjust salt and pepper.
  7. Serve hot with extra jalapeño slices and cracked black pepper on top.

Notes

  • For a spicier chili, add more jalapeño or a dash of hot sauce.
  • This dish can be made ahead of time and reheated.
  • Serve with crusty bread or over rice for a complete meal.
