- 2 Boneless skinless chicken breasts
- 1 lb Potato gnocchi
- 1 cup Asiago cheese, freshly grated
- 1 cup Heavy cream
- 2 tbsp Olive oil
- 2 tbsp Butter
- 3 cloves Garlic, minced
- 1 cup Chicken broth
- 2 cups Fresh spinach
- 1 tsp Italian seasoning
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Sear chicken in olive oil until golden and cooked through; remove and slice.
- In the same pan, melt butter and sauté garlic until fragrant.
- Add chicken broth and cream, simmer gently.
- Stir in Asiago cheese until smooth and creamy.
- Add gnocchi and spinach, cooking until gnocchi is tender and spinach wilts.
- Return chicken to the pan, spoon sauce over top, and garnish with parsley.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Feel free to add other vegetables like mushrooms or bell peppers for extra flavor.
- Make sure to use freshly grated Asiago cheese for the best results.
