Ingredients

  • 4 Chicken thighs or breasts
  • 1 cup Fresh or frozen cranberries
  • 1/2 cup Fresh orange juice
  • 1 tbsp Orange zest
  • 1/4 cup Honey or maple syrup
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tbsp Dijon mustard
  • 1/2 cup Chicken broth
  • Salt & black pepper to taste
  • Fresh parsley or thyme (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly oil a baking dish.
  2. Season chicken with salt and pepper; sear briefly in a skillet until golden.
  3. In a saucepan, simmer cranberries, orange juice, zest, honey, garlic, Dijon, and broth until thick and glossy.
  4. Arrange chicken in the baking dish and pour cranberry-orange sauce over the top.
  5. Roast uncovered for 35–40 minutes, basting halfway through.
  6. Broil briefly if needed for extra caramelization.
  7. Garnish with fresh herbs and serve warm.
