- 4 Chicken thighs or breasts
- 1 cup Fresh or frozen cranberries
- 1/2 cup Fresh orange juice
- 1 tbsp Orange zest
- 1/4 cup Honey or maple syrup
- 2 cloves Garlic, minced
- 2 tbsp Olive oil
- 1 tbsp Dijon mustard
- 1/2 cup Chicken broth
- Salt & black pepper to taste
- Fresh parsley or thyme (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly oil a baking dish.
- Season chicken with salt and pepper; sear briefly in a skillet until golden.
- In a saucepan, simmer cranberries, orange juice, zest, honey, garlic, Dijon, and broth until thick and glossy.
- Arrange chicken in the baking dish and pour cranberry-orange sauce over the top.
- Roast uncovered for 35–40 minutes, basting halfway through.
- Broil briefly if needed for extra caramelization.
- Garnish with fresh herbs and serve warm.

- For a spicier kick, add a pinch of red pepper flakes to the sauce.
