Ingredients
- Italian sausage
- White beans
- Heavy cream
- Chicken broth
- Olive oil or butter
- Yellow onion
- Garlic
- Carrots
- Smoked paprika
- Dried thyme
- Salt & black pepper
Instructions
- Heat olive oil or butter in a pot over medium heat; brown sliced sausage until golden. Remove and set aside.
- In the same pot, sauté chopped onion and carrots until softened.
- Add garlic, smoked paprika, and thyme; cook until fragrant.
- Stir in white beans and chicken broth; bring to a gentle simmer.
- Lightly mash some of the beans to thicken the soup.
- Return sausage to the pot and pour in heavy cream.
- Simmer 5–10 minutes, season to taste, and serve hot.
Notes
- For a vegetarian version, substitute sausage with plant-based sausage.
- Adjust the thickness of the soup by mashing more or fewer beans.
- Serve with crusty bread for a complete meal.
