Ingredients
- Cheese tortellini
- Chicken breast
- Fire-roasted red peppers
- Butter
- Olive oil
- Garlic cloves, minced
- Heavy cream
- Chicken broth
- Parmesan cheese, grated
- Paprika
- Red pepper flakes
- Salt and black pepper
- Fresh parsley
Instructions
- Cook tortellini according to package directions; drain and set aside.
- Season chicken with salt, pepper, and paprika; sear in olive oil until golden and cooked through. Slice and remove.
- In the same pan, melt butter and sauté garlic until fragrant.
- Stir in fire-roasted red peppers and red pepper flakes.
- Add chicken broth and heavy cream; simmer until slightly thickened.
- Stir in Parmesan, then add tortellini and chicken, tossing to coat evenly.
- Finish with parsley and extra butter if desired; serve hot.
Notes
- For a spicier dish, increase the amount of red pepper flakes.
- Fresh parsley can be substituted with basil for a different flavor.
