Description

A luscious, no-bake dessert layered with coconut mascarpone cream, ladyfingers, and coconut truffles.


Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup shredded coconut
  • 2024 ladyfingers
  • ½ cup coconut milk (for soaking)
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 912 coconut truffles (Raffaello-style) for topping
  • Extra shredded coconut for garnish

Instructions

  1. In a large bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy.
  2. Dip ladyfingers quickly into coconut milk and layer them in a square dish.
  3. Spread half of the coconut mascarpone cream over the layer.
  4. Repeat with another layer of soaked ladyfingers and the remaining cream.
  5. Smooth the top and refrigerate for at least 3 hours to set.
  6. Before serving, top with coconut truffles and sprinkle shredded coconut over the top.
  7. Slice and serve chilled for a light, tropical dessert.
