A luscious, no-bake dessert layered with coconut mascarpone cream, ladyfingers, and coconut truffles.

- 1 cup mascarpone cheese
- 1 cup heavy cream
- ½ cup shredded coconut
- 20–24 ladyfingers
- ½ cup coconut milk (for soaking)
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 9–12 coconut truffles (Raffaello-style) for topping
- Extra shredded coconut for garnish
Instructions
- In a large bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy.
- Dip ladyfingers quickly into coconut milk and layer them in a square dish.
- Spread half of the coconut mascarpone cream over the layer.
- Repeat with another layer of soaked ladyfingers and the remaining cream.
- Smooth the top and refrigerate for at least 3 hours to set.
- Before serving, top with coconut truffles and sprinkle shredded coconut over the top.
- Slice and serve chilled for a light, tropical dessert.
Notes
- Ensure ladyfingers are dipped quickly to prevent them from becoming too soggy.
- For a stronger coconut flavor, use unsweetened shredded coconut.
- This dessert can be made a day in advance for better flavor.
