Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup butter, melted
  • 1 package coconut cream pudding (or vanilla pudding + coconut extract)
  • 2 cups whipped topping
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup shredded coconut, toasted
  • 2 cups milk (for pudding)
  • 1 tsp vanilla extract

Instructions

  1. Mix graham cracker crumbs with melted butter; press into a 9×13 dish to form the crust.
  2. Beat softened cream cheese with powdered sugar and a little vanilla; fold in some whipped topping. Spread over crust.
  3. Prepare coconut cream pudding with cold milk; let thicken slightly. Spread over cream cheese layer.
  4. Top entire dish with generous whipped topping.
  5. Toast shredded coconut in a dry skillet until golden.
  6. Sprinkle toasted coconut evenly over the top.
  7. Chill at least 3 hours before slicing for clean, creamy layers.
