- 2 teaspoons pure vanilla extract

- 2 large eggs

- Vegetable oil (for frying)
- Powdered sugar (for dusting)
Instructions
- In a bowl, combine warm milk, yeast, and a pinch of sugar. Let bloom for 5–10 minutes until foamy.
- Mix in eggs, melted butter, vanilla, sugar, and salt. Gradually add flour until a soft dough forms.
- Knead 6–8 minutes until smooth and elastic. Cover and let rise 1–1½ hours until doubled.
- Roll dough to about ¼-inch thickness and cut into squares.
- Heat oil to 350°F and fry beignets 1–2 minutes per side until deep golden brown.
- Drain on paper towels while warm.
- Generously dust with powdered sugar and serve immediately.
