Ingredients

  • 2 sheets Puff pastry
  • 4 Egg yolks
  • 1/2 cup Sugar
  • 1 Vanilla bean or 1 tsp vanilla extract
  • 2 cups Whole milk
  • 2 tbsp Cornstarch
  • 2 tbsp Butter
  • Powdered sugar for dusting
  • Whole almonds (toasted) for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry sheets, prick with a fork, and bake for 12–15 minutes until golden and flaky. Let cool.
  3. Make custard cream: heat milk with vanilla, whisk egg yolks, sugar, and cornstarch, then temper with hot milk and cook until thickened. Stir in butter.
  4. Chill pastry cream until firm.
  5. Slice pastry sheets into even squares or rectangles.
  6. Pipe custard cream generously between two layers of puff pastry.
  7. Top with a final pastry layer, dust with powdered sugar, and garnish with a whole almond.
  8. Chill slightly before serving for clean slices.
