- 4 Egg yolks
- 1/2 cup Sugar
- 1 Vanilla bean or 1 tsp vanilla extract
- 2 cups Whole milk
- 2 tbsp Cornstarch
- 2 tbsp Butter

- Whole almonds (toasted) for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Roll out puff pastry sheets, prick with a fork, and bake for 12–15 minutes until golden and flaky. Let cool.
- Make custard cream: heat milk with vanilla, whisk egg yolks, sugar, and cornstarch, then temper with hot milk and cook until thickened. Stir in butter.
- Chill pastry cream until firm.
- Slice pastry sheets into even squares or rectangles.
- Pipe custard cream generously between two layers of puff pastry.
- Top with a final pastry layer, dust with powdered sugar, and garnish with a whole almond.
- Chill slightly before serving for clean slices.
