Ingredients

  • 1 cup Brown sugar
  • 1 cup Butter
  • 1 tsp Warm spices (cinnamon + nutmeg)
  • 3 Eggs
  • 2 cups Flour
  • 1 tsp Baking powder
  • 1 tbsp Orange zest
  • 1/2 cup Molasses or golden syrup
  • Optional: rum/brandy for soaking
  • 1 tsp Almond extract (optional)

Instructions

  1. Soak dried fruits in warm juice or a splash of rum/brandy for at least 30 minutes (overnight for best flavor).
  2. Cream butter and brown sugar until fluffy; add eggs one at a time.
  3. Mix in molasses, orange zest, spices, and almond extract if using.
  4. Fold in flour and baking powder, then stir in the soaked fruit mixture.
  5. Pour batter into a lined round cake tin.
  6. Bake low and slow at 300°F for 90–110 minutes until firm and golden.
  7. Cool completely; optionally brush with rum/brandy for extra richness.
