- 1 cup Brown sugar
- 1 cup Butter
- 1 tsp Warm spices (cinnamon + nutmeg)
- 3 Eggs
- 2 cups Flour
- 1 tsp Baking powder
- 1 tbsp Orange zest
- 1/2 cup Molasses or golden syrup
- Optional: rum/brandy for soaking
- 1 tsp Almond extract (optional)
Instructions
- Soak dried fruits in warm juice or a splash of rum/brandy for at least 30 minutes (overnight for best flavor).
- Cream butter and brown sugar until fluffy; add eggs one at a time.
- Mix in molasses, orange zest, spices, and almond extract if using.
- Fold in flour and baking powder, then stir in the soaked fruit mixture.
- Pour batter into a lined round cake tin.
- Bake low and slow at 300°F for 90–110 minutes until firm and golden.
- Cool completely; optionally brush with rum/brandy for extra richness.
