  • Salt, to taste

  • Neutral frying oil, for frying

Instructions

  1. Mix softened butter with minced garlic, parsley, salt, and pepper; chill into a firm log.
  2. Pound chicken breasts flat and season lightly.
  3. Place butter in the center, roll tightly, and seal edges well.
  4. Dredge in flour, dip in beaten egg, then coat in panko.
  5. Chill briefly to help set the coating.
  6. Fry until golden, then transfer to oven to finish cooking through.
  7. Rest briefly before slicing to reveal the melted garlic butter center.
