Description

A minimalist Italian pasta where garlic, olive oil, and chili flakes shine.


Ingredients

Scale
  • Spaghetti (or rigatoni)
  • 4 cloves Garlic
  • 1/4 cup Extra virgin olive oil
  • 1 tsp Red chili flakes
  • 1/4 cup Fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Pasta cooking water, reserved
  • Parmesan cheese (optional)

Instructions

  1. Cook pasta in generously salted water until al dente; reserve ¾ cup pasta water.
  2. Gently heat olive oil in a wide pan over medium-low heat.
  3. Add thinly sliced garlic and cook until lightly golden and fragrant (do not brown).
  4. Sprinkle in red chili flakes and stir briefly to bloom the heat.
  5. Add drained pasta directly to the pan with a splash of reserved pasta water.
  6. Toss continuously until the pasta is glossy and coated in the garlic oil.
  7. Finish with chopped parsley, black pepper, and optional Parmesan before serving.

Notes

  • Adjust the amount of chili flakes to your spice preference.
  • For a creamier texture, add more reserved pasta water.
  • Parmesan cheese can be omitted for a vegan version.
