Ingredients

  • 1 cup Granulated sugar
  • 2 Eggs
  • 1 1/2 cups All-purpose flour
  • 1 tsp Vanilla extract
  • 1 1/2 tsp Baking powder
  • 1/2 cup Whole milk
  • Buttercream (1/2 cup butter, 2 cups powdered sugar, 1 tsp vanilla)
  • Green gel coloring
  • Peppermint candies
  • Gold/pearl sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Cream butter and sugar until pale and fluffy, then beat in eggs and vanilla.
  3. Whisk flour and baking powder separately, then alternate adding with milk until smooth.
  4. Fill liners ⅔ full and bake for 22–25 minutes; cool completely.
  5. Whip buttercream until fluffy, tint green, and pipe tall swirls using a large star tip.
  6. Top each swirl with a peppermint candy and gold/pearl sprinkles.
  7. Chill for 10 minutes to help the buttercream set cleanly.
