Ingredients

Instructions

  2. Whisk egg yolks, sugar, and cornstarch. Heat milk separately, temper into yolks, then cook until thick and silky. Stir in vanilla and chill.
  3. Heat heavy cream until steaming, pour over chopped semi-sweet chocolate, and stir until smooth and glossy.
  4. Pipe or spread a thick layer of chilled custard onto half of the cookies.
  5. Top with remaining cookies and gently press to create even layers.
  6. Spoon or dip the tops in ganache, letting excess drip off.
  7. Allow chocolate to firm at room temperature before serving for clean, beautiful layers.
