Description
Tender, fluffy ricotta chicken meatballs simmered in a creamy spinach Alfredo.
Ingredients

- 1 lb Ground chicken
- 1 cup Ricotta cheese
- 1/2 cup Parmesan cheese
- 2 cups Fresh spinach
- 1 Egg
- 2 cloves Garlic, minced
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 1 cup Heavy cream
- 2 tbsp Butter
Instructions
- Mix ground chicken, ricotta, Parmesan, egg, garlic, Italian seasoning, salt, and pepper until just combined.
- Scoop into small meatballs and lightly pan-sear on all sides until golden.
- Remove meatballs and melt butter in the same pan.
- Add garlic and wilt chopped spinach, then pour in heavy cream and simmer to create Alfredo sauce.
- Season with salt, pepper, and extra Parmesan.
- Add meatballs back in and simmer gently for 5–7 minutes until fully cooked.
- Serve hot with extra sauce spooned over the top.
Notes
- For a richer flavor, use freshly grated Parmesan.
- Adjust the seasoning according to your taste.
- Broiling the meatballs for a few minutes can add a nice texture.
