Description

Tender, fluffy ricotta chicken meatballs simmered in a creamy spinach Alfredo.


Ingredients

Scale
  • 1 lb Ground chicken
  • 1 cup Ricotta cheese
  • 1/2 cup Parmesan cheese
  • 2 cups Fresh spinach
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup Heavy cream
  • 2 tbsp Butter

Instructions

  1. Mix ground chicken, ricotta, Parmesan, egg, garlic, Italian seasoning, salt, and pepper until just combined.
  2. Scoop into small meatballs and lightly pan-sear on all sides until golden.
  3. Remove meatballs and melt butter in the same pan.
  4. Add garlic and wilt chopped spinach, then pour in heavy cream and simmer to create Alfredo sauce.
  5. Season with salt, pepper, and extra Parmesan.
  6. Add meatballs back in and simmer gently for 5–7 minutes until fully cooked.
  7. Serve hot with extra sauce spooned over the top.

Notes

  • For a richer flavor, use freshly grated Parmesan.
  • Adjust the seasoning according to your taste.
  • Broiling the meatballs for a few minutes can add a nice texture.
