Ingredients
- Elbow macaroni (12 oz, uncooked)
- Ground beef (1 lb)
- Shredded cheddar cheese (2 cups)
- Kidney beans (1 can, drained and rinsed)
- Diced tomatoes (1 can, 14 oz)
- Tomato sauce (1 cup)
- Onion (1, diced)
- Chili powder (1 tbsp)
- Garlic powder (1 tsp)
- Cumin (½ tsp)
- Salt & pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a large skillet, brown ground beef with onion until no longer pink; drain excess fat.
- Stir in chili powder, garlic powder, cumin, salt, and pepper; cook 1 minute to bloom spices.
- Add tomato sauce, diced tomatoes, beans, and 1½ cups water; bring to a simmer.
- Stir in uncooked macaroni, cover, and simmer 12–15 minutes, stirring occasionally until pasta is tender.
- Remove lid, stir in 1½ cups cheddar until creamy and melted.
- Sprinkle remaining cheese on top, cover for 2 minutes to melt.
- Garnish with chopped parsley and enjoy hot and cheesy!
