Ingredients

  • Elbow macaroni (12 oz, uncooked)
  • Ground beef (1 lb)
  • Shredded cheddar cheese (2 cups)
  • Kidney beans (1 can, drained and rinsed)
  • Diced tomatoes (1 can, 14 oz)
  • Tomato sauce (1 cup)
  • Onion (1, diced)
  • Chili powder (1 tbsp)
  • Garlic powder (1 tsp)
  • Cumin (½ tsp)
  • Salt & pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. In a large skillet, brown ground beef with onion until no longer pink; drain excess fat.
  2. Stir in chili powder, garlic powder, cumin, salt, and pepper; cook 1 minute to bloom spices.
  3. Add tomato sauce, diced tomatoes, beans, and 1½ cups water; bring to a simmer.
  4. Stir in uncooked macaroni, cover, and simmer 12–15 minutes, stirring occasionally until pasta is tender.
  5. Remove lid, stir in 1½ cups cheddar until creamy and melted.
  6. Sprinkle remaining cheese on top, cover for 2 minutes to melt.
  7. Garnish with chopped parsley and enjoy hot and cheesy!
