- 4 chicken breasts (butterflied)
- 2 cups broccoli florets (lightly steamed or raw chopped)
- 1 cup shredded cheddar cheese
- ½ cup cream cheese (softened)
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt & pepper
- Optional: extra cheddar for topping
Instructions
- Butterfly chicken breasts by slicing horizontally without cutting fully through; season inside and out with paprika, garlic powder, salt, and pepper.
- In a bowl, mix broccoli, cheddar, and cream cheese until creamy and chunky.
- Stuff each chicken breast generously and secure with toothpicks if needed.
- Heat olive oil in a pan and sear chicken 2–3 minutes per side until lightly golden.
- Transfer to a baking dish, top with a bit more cheddar.
- Bake at 200°C / 400°F for 18–22 minutes until cheese is bubbly and chicken is fully cooked.
- Rest briefly, then slice and serve with extra broccoli or a fresh salad.

- Ensure chicken is fully cooked before serving.
- Feel free to add other vegetables to the stuffing mix.
