Juicy, flavor-packed meatloaf loaded with bell peppers and smothered in melted cheese.
Ingredients

- 1 ½ lbs ground beef
- 1 cup shredded mozzarella cheese
- 1 green bell pepper, diced
- 1 small onion, finely chopped
- 1 egg
- ½ cup breadcrumbs
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 tbsp chopped chives (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
- In a large bowl, combine ground beef, onion, bell pepper, egg, breadcrumbs, ketchup, Worcestershire sauce, salt, and pepper.
- Mix gently until just combined, then press evenly into the loaf pan.
- Bake for 45–50 minutes, then remove and top with shredded mozzarella.
- Return to oven for another 10–15 minutes, until cheese is melted and bubbly.
- Let rest 10 minutes before slicing for clean portions.
- Garnish with chopped chives and serve warm.
Notes
- Ensure the meatloaf is cooked through by checking the internal temperature reaches 160°F (71°C).
- Feel free to substitute other types of cheese if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
