Description

Juicy, flavor-packed meatloaf loaded with bell peppers and smothered in melted cheese.


Ingredients

  • 1 ½ lbs ground beef
  • 1 cup shredded mozzarella cheese
  • 1 green bell pepper, diced
  • 1 small onion, finely chopped
  • 1 egg
  • ½ cup breadcrumbs
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 tbsp chopped chives (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. In a large bowl, combine ground beef, onion, bell pepper, egg, breadcrumbs, ketchup, Worcestershire sauce, salt, and pepper.
  3. Mix gently until just combined, then press evenly into the loaf pan.
  4. Bake for 45–50 minutes, then remove and top with shredded mozzarella.
  5. Return to oven for another 10–15 minutes, until cheese is melted and bubbly.
  6. Let rest 10 minutes before slicing for clean portions.
  7. Garnish with chopped chives and serve warm.

  • Ensure the meatloaf is cooked through by checking the internal temperature reaches 160°F (71°C).
  • Feel free to substitute other types of cheese if desired.
